Two main realizations today...
1. Vitamin B12 and D are tough to come by on a vegan diet. As a result, I bought fortified coconut milk and vitamin supplements to help.
2. On-the-go in Chicago is tough!
However...
I stumbled into Subway hoping for a salad and found out that the particular Subway I was in served falafel! However, after a quick search I realized their cucumber sauce was off limits. Spicy mustard it was. Go internet!
Energy levels are high.
No food/meat hangovers is great.
Eating education has been extremely enlightening.
Looking forward to more.
